Sous Chef - Hugely Successful Hotel Operation
Location: Leeds City Centre
Salary: £30,000-32,354 + circa £2,000 Tronc (OTE circa £34,500) + Great Benefits
45 Hours: 5 days out of 7 (early/mid/late shifts)
Our client, a highly regarded national branded hotel operator are looking for a highly experienced Sous Chef for their hugely popular, high-volume and successful operation based in Leeds City Centre. Known for its mouth-watering dishes, large scale events, iconic restaurants and bar operation not to forget their high standards of service, this property attracts clientele from all corners of the country.
Due to it being a large brigade and a high-volume operation, we are looking for a passionate Sous Chef who works well and calmly under pressure to support the senior kitchen team.
You will be one of 3 Sous Chefs reporting into the Head Chef and Executive Head Chef.
Required experience:
- Solid hands-on experience as Sous Chef in a large, high volume branded hotel with a busy breakfast service and events business.
- A real passion to provide outstanding food, working hard to maintain and improve performance in order to provide well-presented quality dishes.
- Ensuring a clean and hygienic kitchen environment following food safety management procedures and records that meet all required standards.
- Experience of leading and working in a larger brigade whilst motivating, training and developing a team of different personalities, levels of creativity and skillsets. Strong financial knowledge (GPs, revenue, quality/portion control)
- A cool-headed and calm approach with the ability to work well under pressure.
- A great personality - fun, passionate, charismatic, enthusiastic, people-focused and adaptable to all personalities.
- A great communicator - excellent at developing relationships with the kitchen team, front of house team, senior management and others involved
- The ability to ensure that the team are working to the highest standards, adhering to all policies and procedures as well as running a busy efficient shift and looking after all back of house duties related to the kitchen - stock ordering, stock control, labour, rotas etc.
